Homemade cakes for your little one

As a child I have seen both my parents bake often for us and they used to love experimenting with it. Probably that is how I too picked baking variety of cakes for my son. And moreover your child is happy as there is always cake at home and you are a happy parent because you know every ingredient of the cake they are eating.

Here I share three of my personal favourite recipes that I tried and find healthy, easy as well as yummy for children.

1. Carrot Cake

  • 4 Eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • pinch salt
  • 3 cups grated carrots
  • walnuts if you like

2. Banana Chocochips cake

  • 1 ½ cups Whole wheat flour
  • ⅔ cup sugar 
  • 1 ½ teaspoons baking powder 
  • ¼ teaspoon salt 
  • 1 cup mashed bananas 
  • 1 egg 
  • ½ cup unsalted butter, melted 
  • ¼ cup milk 
  • ¾ cup semisweet chocolate chips

 

3. Strawberry Cake

  • 2 and 1/2 cups- Whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup homemade white butter/unsalted butter melted
  • 1 and 3/4 cups sugar
  • 5 large egg whites
  • 1/3 cup plain curd
  • 2 teaspoons pure vanilla essence
  • 1/2 cup  milk
  • 1/2 cup reduced strawberry puree (Take around one cup of strawberries. Add one cup water to them and churn in mixer. Now put the puree in a pan and reduce it to half cup by heating)
  • optional: 1-2 drops red or pink food coloring

Baking is same for all the above cakes-
Mix the dry ingredients in one bowl and wet ingredients in another. Now slowly add the wet ingredients to the dry and keep mixing using a spatula with cut and fold method until the batter is uniform.

Grease the cake tin well with oil and flour.
Put the batter in the tin and bake in oven or solar cooker for around 40 mins at 180 degrees or until baked through.

Note- I have even tried replacing sugar with jaggery and to me that too tastes equally nice but not every child enjoys that taste – Happy Baking
